The centre of this volume is one of the rarest wines in modern Burgundy: an Aligoté made from vines planted in 1908. Century-old Aligoté is virtually unheard of; the few growers who have such old plantings rarely vinify them as a single-cuvée bottling. Koji and Jae Hwa do — and at extremely low yields — producing a wine that is far from the lemony, light Aligoté most drinkers know, and instead a concentrated, oak-aged white that has become an allocation bottle in its own right.

Élise Dechannes Champagne "Bistrotage Affinage Prolongé" Rosé NV
A rosé Champagne from the Aube grower whose Bistrotage range has become a cult bottle in Tokyo's natural-wine circles. "Affinage Prolongé" denotes extended ageing on lees, which gives this rosé an autolytic depth and savoury complexity that distances it from most pink Champagne. Pinot Noir-led, very low dosage, biodynamically farmed.

The estate's prestige cuvée — a single-vineyard, single-vintage expression of Pinot Noir-led Champagne released in tiny allocations. Quietly worshipped by Tokyo sommeliers; rarely seen outside specialist hands.
Domaine Koji et Jae Hwa Bourgogne Aligoté "1908" 2023
Estate-grown from vines planted in 1908, making them over 115 years old. Century-old Aligoté is virtually unheard of in Burgundy, and the concentration that these ancient vines deliver allows Koji and Jae Hwa to ferment in 100% new oak with indigenous yeast — yet the oak is barely perceptible against the wine's intrinsic density. Approximately 600 bottles produced annually. An allocation-only wine that demonstrates Aligoté is capable of every bit as much seriousness as Chardonnay.
Clos Rougeard Saumur-Champigny "Le Bourg" 2015
The Foucault-era flagship from one of France's most celebrated red-wine estates.
