Domaine Guilbert Gillet Savigny-lès-Beaune Aux Petits Liards Vieilles Vignes 2021 750ml

Domaine Guilbert Gillet is one of the most closely watched new names in Burgundy. Benjamin Guilbert, born in 1991, trained at Domaine des Lambrays, de Montille, Guigal, Trimbach and Château Haut-Brion, then found his real teacher in Jacky Truchot of Morey-Saint-Denis, whose gentle, old-school Burgundies became the model for his own. In March 2020 he bought a small cellar and 0.2 hectares in Savigny-lès-Beaune, added fruit from premier-cru sites in Aloxe, Pommard and Morey as a négociant, and by 2023 had built the holding up to 3.6 hectares — all bought at today's prices, which is why the wines are not cheap and why he is determined they earn it. Farming is organic, worked by horse rather than tractor; reds are fully destemmed, raised eighteen months in old barrels, and bottled unfined and unfiltered by hand, straight from the cask through a split tap at nine hundred bottles a day.

Aux Petits Liards is a Savigny-lès-Beaune lieu-dit on the Pernand side of the village, and this Vieilles Vignes bottling comes from its oldest plot — the domaine's own vines, the heart of the range. 2021 was Burgundy's frost year: yields were tiny and the wines that survived are lean, fragrant and classically built. In Guilbert's hands that means a pale, perfumed Savigny of red cherry, rose and cool earth, with the fine, sappy structure of the Truchot school. Very little was made.
