Domaine Guilbert Gillet Savigny-lès-Beaune 1er Cru "Les Peuillets" 2023

Domaine Guilbert Gillet is the young estate of Benjamin Guilbert (born 1991) in Savigny-lès-Beaune, close to the road between Dijon and Beaune, founded with his partner and investor René Gillet; the first vintage was 2020. Before that he worked at Domaine des Lambrays, Domaine de Montille, Guigal, Trimbach and Château Haut-Brion, and he regards Jacky Truchot of Morey-Saint-Denis as his mentor. In March 2020 he bought a small cellar and about 0.2 hectares; by 2023 the estate had grown to 3.6 hectares in twelve parcels. Farming is organic, with ploughing by horse and by hand. The reds are fully destemmed, fermented in stainless steel and aged about 18 months in barrel without racking, then bottled by hand straight from the cask, unfined and unfiltered, under a green wax seal.

Les Peuillets is the estate's premier cru, an east-facing site on the Beaune side of Savigny. It comes from two old-vine parcels, the older planted in 1955, which are vinified separately and blended before bottling. The 2023 had a short maceration of about four to five days and was raised for 18 months in 100% new oak.
