Domaine Yui’s Ty 2020 (sometimes labeled “Tx 2020”) is a deconstructive pétillant blanc from Yoichi, crafted using a near equal blend of Portland (51%) and Niagara (49%) grapes. This wine embodies the winery’s experimental approach and minimal intervention philosophy. (Shichikura listing; Winy Tokyo notes)

On the nose, it greets with bright aromas of white flowers, green apple, subtle peel, and a hint of yeast. The palate is lively and dry, with fine bubbles, crisp acidity, and a clean finish. As it evolves, delicate mineral tones and soft citrus notes emerge.

This wine is ideal as an aperitif, and pairs beautifully with seafood, light salads, soft cheeses, or dishes requiring freshness and light effervescence. Serve chilled around 8–10 °C to appreciate its delicate fizz and aromatics.
