1. Yamadado | Yoichi Pinot Noir 2023 (Far Left)

  • Region: Yoichi, Hokkaido

  • Style: Light Red / Natural

  • The Vibe: Pure, ethereal, and "umami-driven."

  • Tasting Notes: Produced by Yuichiro Yamada (a disciple of Domaine Takahiko). The 2023 vintage is ripe yet fresh, offering notes of wild strawberries, red plums, and a savory dashi-like finish. It is low-intervention winemaking at its finest.

2. Terre de Ciel | TERRA 2021 (Left Center)

  • Region: Komoro, Nagano

  • Style: White / Mineral

  • The Vibe: Sharp, crystalline, and high-altitude.

  • Tasting Notes: From the "Earth of the Sky" winery at 930m altitude. The "TERRA" label represents the sun and soil. Expect intense mineral salinity (salty stone), citrus zest, and white flowers. A wine of tension and precision.

3. Domaine Hase | Fukuihara Rouge "pfZ" Private Reserve 2023 (Right Center)

  • Region: Takayama, Nagano

  • Style: Red Blend (Field Blend)

  • The Code: "pfZ" stands for a unique blend of Pinot Noir (p), Pinot Fin (f), and Zweigelt (Z).

  • Tasting Notes: A "Private Reserve" release due to the exceptional ripeness of 2023. It is complex and spicy, layering black cherries and violets with hints of black pepper and nutmeg. A structured wine that evolves beautifully in the glass.
