Mongaku Valley Winery is the estate of Shigeaki Kihara in the Nobori district of Yoichi, Hokkaido, opened in 2018 on revived farmland, with about 2 hectares of vines at 130–140 metres. All of its wines are field blends: several French varieties grown together are pressed and co-fermented with wild yeast, a concept inspired by Japanese dashi, where several ingredients are combined into one balanced stock. The aim is a cool-climate dry white with acidity, complexity and gentle bitterness in balance.
All three were whole-bunch pressed, fermented in stainless steel with native yeast, went through malolactic fermentation and were bottled unfined and unfiltered in September 2020 under DIAM corks; a little sediment or haze is natural.
