Nora Ken Yamarone 2023

Nora (Norakura) is the winery of Ken and Katsuko Sasaki, who both studied winemaking in Burgundy. Founded in 2012 in Hakodate, it farms its own Fumizuki vineyard in Hokuto, planted from 2011, and moved the cellar to Fumizuki in 2023. The wines use only Hokkaido grapes, wild yeast, no added sulphites and no filtration.

NORAKEN is the winery's experimental series, different every year. Yamarone is its red from Yama Sauvignon grapes grown in Otobe; in past vintages the grapes were air-dried for about a month before fermentation, in the spirit of Amarone.
