The Deputy Editor of The Wine Advocate makes wine in an unmarked cellar in the heart of Pommard — labels glued by hand, each neck dipped in wax, barely more than a barrel of each cuvée, much of it kept for his own table.

Aux Etelois is his Gevrey-Chambertin: a small parcel that ripens fence-to-fence with Domaine Fourrier's Griotte-Chambertin. Made with meticulous pédicellé destemming — berry by berry off the stem, the method associated with Lalou Bize-Leroy.
