Kenjiro Kagami's release note for this wine is less a description than a request: please cellar it, because the domaine could not.

Entre Deux Bleus is the estate's Savagnin, grown on a single block of about 3.2 hectares above the village of Grusse in the southern Jura, with forest on three sides. The vineyard had been abandoned in the 1950s and overgrown before replanting began in 2005; Savagnin takes roughly 1.1 hectares of it, on marl and clay over Jurassic limestone, farmed without herbicides or synthetic sprays. Kagami explained the name in his first release letter in 2011: the vines stand between two blues, the sky above and the sea that once covered this ground, and Savagnin is the local grape he considers indispensable for a Jura soil shaped by both. The wine is kept topped up in barrel rather than aged under a veil, and bottled in early September, just before the next harvest.

2021 was a hard year at Grusse. Kagami's note to Vinaiota, his Japanese importer, records a late spring frost followed by a cool, very wet summer in which downy and powdery mildew ran through the vines and left a very small crop. He draws a direct contrast with 2019, another frost year: the same damage, an opposite wine. Where his 2019 whites are built on scale, the 2021 showed transparency and a line of acidity from an early stage, with modest alcohol; the importer lists 12 percent. The 2021s, he adds, slip down easily because of that acid and lightness, but given time they state the character of the place clearly.

Kagami went to France in 2001, trained in Burgundy and the northern Rhône, then spent six years with Bruno Schueller in Alsace before he and his wife Mayumi founded the domaine in 2011. Fermentation is on wild yeasts without temperature control, and the wines go to bottle unfined and unfiltered; iDealwine adds that no sulphur is added.

In the glass

Kagami's own words, written for the June 2026 release, are the best guide: clear and transparent, with acidity running through it, but closed for now. Terra Vinea, a French retailer, describes the 2021 as taut, with a saline, persistent finish that it attributes to low yields and long ageing. We have found no published critic score for this vintage.

When to open

Kagami asks buyers to keep the bottle for several years rather than open it now; he would have held it back himself, as he did with Sonorité du Vent 2019, had the domaine's resources allowed. Our suggestion: revisit from 2028, served cool.

At the table

Our suggestion, not the domaine's: aged Comté, or chicken in a cream sauce with morels.
